Stuffed French Toast

Mascarpone & Strawberry Stuffed that is

Pretty quick and easy to make, it was a total hit!
Hubby did say it could pass as a dessert too

The Strawberries are sliced & sprinkled with Stevia & Cinnamon

Turkey Broccoli Cheese (& more) balls

Yes we are alive! I know its been a very long time........

Hubby always says why don't you write down what you make?
Did you save the recipe?
That was good, what was in it?

I love to cook, measuring and following recipes just isn't me. I throw a dash here and toss a spoonful there never to know exactly what was in that dish I just finished up.

Well the other night I had an idea in my head that I knew it would be awesome, so I measured instead of dashing and tossing and I wrote everything down as I did it.

The end result: Turkey Broccoli Cheese (& more) balls
egg & grain free can be dairy free if you use pecorino like I did

Please note this makes a large amount, enough for 3 meals or 2 meals with a few grab 'n go meat snacks, or if you're a smaller family it could possibly make 4/5 meals worth.

2.5 lbs ground turkey
1 tsp of each - salt, pepper, garlic powder, red pepper flakes, Italian herb mix
1 cup shredded pecorino cheese (or manchego or parmesan) 
1/2 red onion
1 cup cooked broccoli
1 cup cooked cauliflower

In a large bowl mix together turkey, cheese and seasonings

In food processor chop/grind/rice up onion, broccoli and cauliflower

Add veggies to meat and mix well

Form meat balls about 1 1/2 inches in size

I form out a cookie sheet worth at a time (24 balls), first set went in to cook, second set went in the freezer, it all depends on how many you need and want.
I also made meat snacks, I filled 6 muffin tins with the mixture, could have been another sheet of balls or it can even fit into a loaf pan if you wanted to.

For Meatballs: In covered pan on medium with olive oil brown up one side then flip and brown the other check for doneness.

For Meat Snacks: Grease the tin and bake at 350 for 30 mins, cool, wrap, refrigerate or freeze. If frozen pull one out when headed to bed and defrost in fridge for the next day. If defrosted zap for a few seconds.

Extra Meatballs: I freeze for a few minutes on the cookie sheet then pop into a freezer bag single layer. Just pull out in the morning and defrost in fridge for that nights dinner.

~Tasty Tuesday~ Sausage Soup

This one is so simple and so versitle,

you can clean out the fridge or pantry and it still taste so good each & every time.

Base-

Package of your favorite Sausage (I use italian or sage or whats on sale)

1/2 onion diced

2 garlic cloves diced

Broth (I use chicken but beef or veggie can work too)

Cooking-

Start by browing up the sausage,onion,garlic in the bottom of your pot

add in broth/cubes & water

Thats the basics of this soup,

from here on out its up to you, below I'm showing you tonights version, I'll also list a few that went very well in our house.

Tonight I added in a can of spinach (fresh or frozen works great too), a can of tomato sause and a small bag of shells

Tried & true versions:
Mushrooms (fresh or canned)
Mushroom & Zuchini
Spinach (fresh, frozen, canned)
Zuchini , tomato, motzarella cheese (tossed in when served)
Bell pepper trio (fresh or frozen)
add rice or pasta to any of theses
Of course this can be made Primal, GF, Low Carb, DF, Egg Free

17-365 & ~Tasty Tuesday~ all in one

Beef & 3 Bean Chili !



So perfect for this freezing snowy day.









Quick and easy I tell you.

Package of Chili seasoning
1 Onion-chopped
a couple Garlic Cloves-chopped
1 small can Tomato Sauce
1 regular can Tomatoes (here I used fire roasted)
1 can RoTel Tomatoes & Chiles

1 package Lean Ground Beef

I cook my own beans- black, kidney, red
I used 5 laddles worth-juice included
or of course canned works too

1 can black
1 can kidney
1 can red or pink

In my crockpot I heat up the beef, onions, garlic, seasoning.

Then just add in all the canned items plus 1 cup water.

Simmer 6 hours.

Serve with Fritos, shredded cheese, sour cream, jalapenos.........




Now to be gluten free just check your seasoning package and select a different one if needed, obviously to be dairy free leave off those select toppings, slightly lowcarb/primal due to the beans you could always eliminate those and of course the Fritos too

Dinner for the next 2 weeks

No particular order.
Meats are already bought and in the freezer, staples like Rice/Pasta/Potatoes are already on hand.
Fresh/frozen veggies were bought today.



  • Nacho/Taco/Burrito Night, chicken flavored rice and the following toppings lettuce-tomato-avocado-onion-cheese-sour cream

  • Sausage Soup w/mushrooms & spinach, bread rolls

  • Salmon, rice, garlic green beans

  • Grilled Flank Steak, baked potatoes, grilled Zucchini & eggplant

  • Grilled BBQ & Red Hot chicken pieces, pasta salad w/ cucumbers, tomatoes, bacon

  • Sesame Pork Lo mein w/ broccoli, squash, onion, mushroom

  • Brats & Peppers w/broth , rice

  • Pork Chops, rice, beans

  • Spaghetti w/ground pork red sauce

  • Chili w/beef & beans, Frito's, saltines

  • Creamy Broccoli Pork chops, garlic bread, peas

  • Burgers, fries, corn on cob

  • Chicken Alfredo Pasta

  • Corn Beef on rice w/ corn & fries

3-365 & ~Tasty Tuesday~ all in one

Jalapeno Beef!

Ingredients:
1 small can tomato sauce, 1 large can Jalapeno (whole/halved/sliced whichever) save liquid, remove carrots if there are any, 1 can tomato & chilies, 1 package Thin Sliced Beef (its usually pretty cheap and super thin huge pieces)

Directions:
Slice up beef into thin strips, place in large pan, add in all three cans, simmer for 20-30 mins.

Serve with beans, rice, tortillas, tomatoes, avocado.....

~Tasty Tuesday~ Breakfast

Breakfast Burritos & Egg Muffin Sandwiches


(premake 12 at a time)




You'll need:


vacuum seal storage bags


paper towels/napkins


Ingredients:


6 tortillas


6 english muffins


1 dozen eggs


6 slices bacon


6 slices cheese


6 sausage patties or canadian bacon circles


salt & pepper



It took about an hour to bust out the 12 items and about $10 so that's under $1 each morning for a hot fresh burrito or sandwich. Take one to work, take out of bag, pop in the microwave wrapped in paper towel. maybe 30-45 seconds, time varies, try it a few times to get it right.



Burritos~


Warm up 6 tortillas, place 1/2 slice cheese in the center of each,


Cook up 6 slices bacon, place a slice on top of each tortilla w/ cheese,


Scramble up 6 eggs, scoop out evenly between the tortillas.


Fold two sides in slightly and roll tight, wrap with paper towel,


place in bag, seal, label and freeze.





Egg Muffins~


Open the 6 muffins, place 1/2 slice cheese on each,


either cook up sausage patties and place on cheese,


or place a slice of canadian bacon on cheese,


Fry up an egg at a time, place on meat,


Close sandwich, wrap with paper towel,


place in bag, seal, label & freeze

~Tasty Tuesday~ Fresh Peach Cinnamon Crisp

Super yummy!
quick & easy too
(from a nonbakers point of view)

preheat oven 375

9.5in pie dish, butter lightly

9 fresh ripe (unloved by the kids) peaches, peel-slice-deseed, place in piepan

4tsp lemon juice, sprinkle over peaches

in bowl mix together-
1c all purpose flour (gluten free works too)
1c brown sugar
1tsp cinnamon

add in 1 egg and fork blend it to make a crumbly mixture

sprinkle crumble mixture on top of peaches

melt 1 stick (1/2c) butter and drizzle ontop of mixture

bake 35min

serve & top with a scoop of vanilla icecream (to the kids who wouldn't eat the peaches, and they cleaned their bowls)

Tasty Tuesday ~ $5 & 20min Pasta Dinner

This is so simple & easy to change,

great for cleaning out the pantry or freezer,

don't mind the first picture (i forgot to take the ingredients picture before hand)


Everything pictured here totalled under $5 and was on hand


Alfredo Sauce $2

Pasta free with sauce

Mushrooms $1 half package

Green Beans $.50 half a bag-frozen





Slice and saute mushrooms as the green beans or defrosting for a minute

add green beans to mushrooms- sprinkle with salt,pepper,garlic & parsley

add in Alfredo and 1/2 a jar of milk



Boil pasta as per directions

toss into veggie/sauce mix








if you have canned green beans those could work, or even 1/2 a bag of broccoli,

I've added left over chicken or turkey too, mix & match get creative

~Tasty Tuesday~ Egg over Spinach

So here's a lowcarb quickie
I have a thing for this dish
I may even eat it too much
to top it off its all cooked in one pan
Pictured here the egg is fried, please note its super great pouched as well
Let's get started
in a saucepan add in a 1/4 cup water
a big handful fresh spinach
season with salt & pepper
cook spinach down, stir occasionally
once cooked through remove to plate
add to pan 2 slices of bacon
cook through
remove to drain
in bacon grease fry up egg
season if you'd like
cook through
top spinach with egg
crumble bacon on top of egg
add fresh shredded Parmesan cheese

Enjoy!

Tasty Tuesday ~ Garlic Dill Slaw

Long time no post!
I'm determined to get back into a groove.

This week we have a lowcarb no sugar Garlic Dill Slaw
Really simple and quick to make
1/2 head green cabbage
1/2 head purple cabbage
6 slices bacon
1 cucumber
1 cup mayonnaise
2 tbsp white vinegar
1 tbsp crushed/chopped garlic
1 tbsp fresh chopped dill
salt, pepper
Start cooking bacon,
slice up the cabbage and cucumber to your thinness preference,
in a bowl mix cucumber with mayonnaise, vinegar, garlic, dill, salt & pepper
after its mixed through pour and mix over cabbage
serve up, top with crushed bacon
serves 6

Me~Mom

I'm feeling old :(
I'm almost 32, about half grey & a good 30 lbs over weight.
I seem to be tired & grouchy all the time.
I'm not enjoying the projects, playtimes or even being awake.
I'm slacking on the house, not working out, skipping out on taking L to play group.
Well today I weighed myself, 154 lbs at 5ft 1in that's not good.
I thought of starting a diet yesterday- I had rice noodles so yesterday couldn't count.
Today is my first full day of Low-Carbing it again.
It worked a few years ago, its a way of life, it can be done & work for me.
Hi, my name is Jessica and I'm a Carb-a-holic.
I need to lose at least 29lbs,
I need to be able to ride my bike and not feel like passing out.
Here's to a better me.
I'll name this Tummy & Thigh Thursday
(even though its Wednesday for this first post I'll keep it updated on Thursdays)
and to kick it off right...a picture (not of me :))

Yes that's mayonnaise, mustard & ketchup too with pickles, onions & tomatoes to round it out as a burger salad

Tasty Tuesday ~ Crockpot Pernil

This is so super simple pernil,
once cooked it can be used for so many things

Pork-
use bone in butt with the big slab of fat on the side

(since this is being done in the crockpot we are using butt,
if this was being done in the oven the traditional way it would be a big ole shoulder with skin and all)

don't trim this, I know I would want to too, but don't

place meat in crockpot
rub w/ olive oil
season (no measuring-sprinkle all over) with salt, pepper, oregano, adobo & 1pk sazon.
add 1 cup water

cook on high 6 hrs

and its done

take some forks or tongs start pulling apart take out bone

serve as is w/ rice & beans
put on cuban sandwiches
add some bbg sauce
fill taco shells
roll some burritos
eat in the morning with some eggs

Tasty Tuesday ~ Chips & Dip

Chips~
Oil for frying
pot/pan/deepfryer
strainer/papertowels
10 corn chips
salt

Heat oil

cut chips
half into quarters
half into thirds

fry chips until golden
Strain & salt
Dip~
Dash of
salt,pepper,red pepper flakes
1Tbs minced garlic
2Tbs minced onion
2 Tbs sour cream
1 avocado
(you can sub sourcream out for another avocado)
mix mix mix

Serve & enjoy!

Tasty Tuesday ~ Simple Tomato Topped Pasta




1 big huge large tomato
or 3-4 romas, 2-3 vine ripe
1 box shells
olive oil
salt
pepper
garlic powder
onion powder
red pepper
Italian seasoning




Cook pasta as directed
while cooking
chop up tomatoes to about the same size as pasta
in a large bowl add in tomatoes and seasonings to taste
add in olive oil-enough to cover tomatoes
let this all sit & marry while pasta cooksstrain pasta, add to tomatoes, mix well, serve with garlic bread

Tasty Tuesday ~ Biscuit Bites

J's creation & new favorite

Biscuit Bites

Follow directions on the Bisquick box for cheesy drop biscuit mix
instead of dropping onto a pan drop them into a lightly sprayed cupcake pan
before backing sprinkle all w/a pinch of salt, pepper, thyme

While baking, get the following out
Sliced ham, Grape jelly

Tear or chop up your sliced ham and heat up in a small skillet

When biscuits are done let them cool for a bit

slice in half (like a roll)
drop a small dollop of jelly on one side
then add a small spoon of ham

close & eat & enjoy

15 Min Sausage & Peppers over Rice



So super quick & easy,
This is great on those busy days or nights.

We make a large batch but it can easly be cut in half.

Start rice cooker with your desired amount of rice.

Start burner on Med (5)
In a big pan w/ lid add in
1 tablespoon olive oil 1pkg Smoked Sausage (precooked kind) cut in 1/2in circles
1pkg Polska Kielbasa (precooked kind) cut into 1/2in circles
6 mushrooms big/rough/chopped
1/2 onion big/rough/chopped
1teaspoon minced garlic
salt & pepper mix well
add in 1 cup water
cover for a few minutes
add in frozen bell peppers amount to your liking (I did half bag)
mix well
drop burner to Low/Med (3)
cover until rice is done

Serve over rice & enjoy!

My kids can scarf down this whole pot.
Gluten Free as long as your sausage is.

crockpot chicken

Set crockpot on High/6hrs

add in~
chicken of your choice
1 can cream of .....
3 cups chicken broth
1/2 onion diced
2-3 garliccloves minced
handful chopped parsley
salt/pepper/redpepper flakes to you liking

after 4 hrs
add in~
a few chopped potatoes

after 5 hrs
add in~
1 cup rice

when time is up stir it all up and add in more chicken broth if you'd like it more soupy & wet

serves 6

Asian inspired Slaw

1/2 head Purple Cabbage
1/2 head Cabbage
Cut both into thin strips & place in big bowl
add in the following to your liking
Soy Sauce, Seasame Oil, Rice Seasoning, garlic powder, onion powder, ground ginger, toasted seasame seeds, salt & pepper
Mix it through if needed add in a bit of oil to help wet things up.

*to make it gluten free use gf soy sauce
