Stuffed French Toast

Mascarpone & Strawberry Stuffed that is

Pretty quick and easy to make, it was a total hit!
Hubby did say it could pass as a dessert too

The Strawberries are sliced & sprinkled with Stevia & Cinnamon

mmmm mmmm good!

Chocolate!
Yes that's right, yummy!
Practical Paleo Book has a recipe for chocolate nutfilled candies-
I have done my own twist to them after so many batches but boy oh boy they are so good.

Pictured here is the 3 steps, 
on the left the first dab of chocolate, middle is with the nut mixture added, 
right is with the second dab of chocolate added.
 Once cooled its ready to get peeled and eaten

My adjustments are minor,
 I no longer measure correctly, I just spoon out (with a normal soup spoon) even amounts of the liquids listed. I sprinkle in the cinnamon and omit the salt from the chocolate. I also don't freeze it as stated, I spoon, place nut ball, spoon and refrigerate all at one time. I end up making two batches of chocolate per tray of candies.
As for the nut mixture I do a bigger batch at one time, 2 handfuls or so of almonds and just pour in the honey, I do add the salt to this though. I also roll the mixture into little balls rather than spoon it on as written.

meal plan Sept 25-Oct 2

It surely has been a loooong while but I am slowly getting back into to things.

Looking at the fridge today I realized hey I need to go shopping, headed to check out the freezer, wow look at all that meat.....
Ding ding light went on- meal plan around what I have a shop for the missing pieces.

Wed~
 D. chicken sausage, asian veggies stirfry, fried rice
Thur~
L. leftover dinner ^
D. tacos- beef & bean, corn on cob
Fri~
L. tuna & cucumber on sandwich or cracker
D. pork tenderloin, broccoli, sesame & soy fried pasta
Sat~
L. hotdogs, chips, carrots
D. drumsticks, rice, beans
Sun~
L. burgers, fries, celery
D. flanksteak, salad, garlicbread
Mon~
L. leftover dinner ^
D. porkchop, rice, broccoli
Tue~
L. sandwiches, chips
D. chicken breast wrapped in bacon & asparagus, alfredo pasta
Wed~
L. leftover dinner ^
D. beef stew, potatoes mushrooms carrots etc., toasted hamburger buns

All meat I had on hand and worked around rotating them.
Pasta, rice and bread (sourdough-sandwich-hotdog/burger buns-tortillas) are always in stock & on hand
Broccoli, corn on cob & asain stirfry mix are always in the freezer.

Breakfast items are pretty basic and always on hand- eggs,bacon, cereal, oatmeal
Snack items are mostly fruit & cheeses

I do bulk make and freeze waffle sticks & muffins for quick grab in the morning or after school

Turkey Broccoli Cheese (& more) balls

Yes we are alive! I know its been a very long time........

Hubby always says why don't you write down what you make?
Did you save the recipe?
That was good, what was in it?

I love to cook, measuring and following recipes just isn't me. I throw a dash here and toss a spoonful there never to know exactly what was in that dish I just finished up.

Well the other night I had an idea in my head that I knew it would be awesome, so I measured instead of dashing and tossing and I wrote everything down as I did it.

The end result: Turkey Broccoli Cheese (& more) balls
egg & grain free can be dairy free if you use pecorino like I did

Please note this makes a large amount, enough for 3 meals or 2 meals with a few grab 'n go meat snacks, or if you're a smaller family it could possibly make 4/5 meals worth.

2.5 lbs ground turkey
1 tsp of each - salt, pepper, garlic powder, red pepper flakes, Italian herb mix
1 cup shredded pecorino cheese (or manchego or parmesan) 
1/2 red onion
1 cup cooked broccoli
1 cup cooked cauliflower

In a large bowl mix together turkey, cheese and seasonings

In food processor chop/grind/rice up onion, broccoli and cauliflower

Add veggies to meat and mix well

Form meat balls about 1 1/2 inches in size

I form out a cookie sheet worth at a time (24 balls), first set went in to cook, second set went in the freezer, it all depends on how many you need and want.
I also made meat snacks, I filled 6 muffin tins with the mixture, could have been another sheet of balls or it can even fit into a loaf pan if you wanted to.

For Meatballs: In covered pan on medium with olive oil brown up one side then flip and brown the other check for doneness.

For Meat Snacks: Grease the tin and bake at 350 for 30 mins, cool, wrap, refrigerate or freeze. If frozen pull one out when headed to bed and defrost in fridge for the next day. If defrosted zap for a few seconds.

Extra Meatballs: I freeze for a few minutes on the cookie sheet then pop into a freezer bag single layer. Just pull out in the morning and defrost in fridge for that nights dinner.
