15 Min Sausage & Peppers over Rice



So super quick & easy,
This is great on those busy days or nights.

We make a large batch but it can easly be cut in half.

Start rice cooker with your desired amount of rice.

Start burner on Med (5)
In a big pan w/ lid add in
1 tablespoon olive oil 1pkg Smoked Sausage (precooked kind) cut in 1/2in circles
1pkg Polska Kielbasa (precooked kind) cut into 1/2in circles
6 mushrooms big/rough/chopped
1/2 onion big/rough/chopped
1teaspoon minced garlic
salt & pepper mix well
add in 1 cup water
cover for a few minutes
add in frozen bell peppers amount to your liking (I did half bag)
mix well
drop burner to Low/Med (3)
cover until rice is done

Serve over rice & enjoy!

My kids can scarf down this whole pot.
Gluten Free as long as your sausage is.

Life happened & I totaly got lost on posting.

The weather has held up, it's been pretty enough for the kiddos to play in the water.
C is still at Nonnas learning to drive :) stick shift to boot.
A has hickies on his neck :( this boy is gonna stress me out.
Hubby is still home, water therapy is going well.
I'm on my 3rd week of "Stress Free Parenting" we are working on "Mindfulness"
Poor Luke needs a bath, I really need to find him a groomer.

crockpot chicken

Set crockpot on High/6hrs

add in~
chicken of your choice
1 can cream of .....
3 cups chicken broth
1/2 onion diced
2-3 garliccloves minced
handful chopped parsley
salt/pepper/redpepper flakes to you liking

after 4 hrs
add in~
a few chopped potatoes

after 5 hrs
add in~
1 cup rice

when time is up stir it all up and add in more chicken broth if you'd like it more soupy & wet

serves 6

Asian inspired Slaw

1/2 head Purple Cabbage
1/2 head Cabbage
Cut both into thin strips & place in big bowl
add in the following to your liking
Soy Sauce, Seasame Oil, Rice Seasoning, garlic powder, onion powder, ground ginger, toasted seasame seeds, salt & pepper
Mix it through if needed add in a bit of oil to help wet things up.

*to make it gluten free use gf soy sauce

The little ones played alittle on the slip n slide, I did a bit of laundry, hubby picked through his work clothes.....

Happy 30th

to the Man :)
Today went great. Presents & flan for breakfast!
The kids were super excited. Last night L & A helped me decorate the dinning room. This morning L & J woke hubby up to "Happy Birthday" & "theres presents daddy"
We stayed home all day then after cooking up dinner for the kids we hit Adriatic Grill & went to see GrownUps.

Flan & Flan it will be for hubbys cake tomorrow.
My tester Tres Leches Cake was a no go.
Hubby & I ate some but the kids wouldn't touch it.
I may not know how to bake like I posted yesterday but I sure can make a Flan.
I'll even share 2 recipes with you :)


heat oven to 350
fill a 9x13 backing dish half way with water and place in oven to start heating
use either recipe they still cook the same

Hubbys favorite way~

Get out your blender and add in
4 eggs
1 can condensed milk
1 can evaporated milk
1 pkg cream cheese
dash vanilla extract
Blend

My favorite way~
Get out your blender and add in
5 eggs
1 can condensed milk
1 can evaporated milk
1 can table cream
dash vanilla extract
Blend


Back to cooking-

in a pot melt & stir 1 cup sugar,
once melted and a caramel brown in color pour into an 8x8 baking dish
pour milk mixture on top of caramel
place 8x8 dish into 9x13 water filled dish
bake 45mins
then test the texture with a knife, it should slide out clean, add a few minutes if needed, top will be a golden brown.
once done take out of water bath and set aside to cool, slide a knife around the 4 edges and give it a jiggle, the caramel should rise into the sliced edges.
after two/three hours flip it onto a serving plate (place a plate onto dish hold closed tightly and flip over)
there will be loose caramel, keep in on the flan in the serving plate, its super yummy, cover and refrigerate till ready to eat.
Serve cold & enjoy!

Tres Leches Cake is in the works.
I am not a baker!
I can cook, but not bake.
So hubby requested a Tres Leches Cake for his Birthday this coming Friday.
Tonight I'm giving it a trial/tester run.
I'm using this recipe.
Fingers crossed this goes well.

woot! summer

It's here, heat!
We hit 79 today, with 89 predicted for tomorrow & then 95 for Thursday.
The 2 little ones were out on the slip n slide and I sat under the umbrella until about 5:30.

So posting once a day for 30 days has made it into the 2nd month.
Not to bad.

Hubby has 2 appt. Thursday to get started on his therapy.

C seems to be having a good time at Nonnas.

A is sleeping & skating his summer away.

Shopping day

Shopping day with A today.
It was nice to spend a bit of time with him alone.
During the few minutes he was in the dressing room a few things flashed at me that I was acting/talking like my mom did when I was a teen.
He didn't say anything rude or mean to me & seemed quite content with my thoughts or opinions on the clothing pieces.
We did go through and discussed budget & taxes, fitting & sets.
It went well, he picked a bit out, tried them all on, put back what didn't fit or look good, then went through and added everything up.
He was $8.34 over his budget but got the ok from hubby & I and walked out with a few bags of great looking clothes.
