Thurs:
L- Tuna any way you choose
D- Chicken wings & salad
Fri:
L- Pork tenderloin, zucchini noodle or pasta noodle
D- Grilled salmon, green beans, caulirice
Sat:
L- Hotdogs/leftovers
D- Short ribs, grilled eggplant/zucchini/squash
Sun:
L- Brunch/Breakfast
D- Pork roast, bbq sauce, buns, cabbage slaw

meal plan Sept 25-Oct 2

It surely has been a loooong while but I am slowly getting back into to things.

Looking at the fridge today I realized hey I need to go shopping, headed to check out the freezer, wow look at all that meat.....
Ding ding light went on- meal plan around what I have a shop for the missing pieces.

Wed~
 D. chicken sausage, asian veggies stirfry, fried rice
Thur~
L. leftover dinner ^
D. tacos- beef & bean, corn on cob
Fri~
L. tuna & cucumber on sandwich or cracker
D. pork tenderloin, broccoli, sesame & soy fried pasta
Sat~
L. hotdogs, chips, carrots
D. drumsticks, rice, beans
Sun~
L. burgers, fries, celery
D. flanksteak, salad, garlicbread
Mon~
L. leftover dinner ^
D. porkchop, rice, broccoli
Tue~
L. sandwiches, chips
D. chicken breast wrapped in bacon & asparagus, alfredo pasta
Wed~
L. leftover dinner ^
D. beef stew, potatoes mushrooms carrots etc., toasted hamburger buns

All meat I had on hand and worked around rotating them.
Pasta, rice and bread (sourdough-sandwich-hotdog/burger buns-tortillas) are always in stock & on hand
Broccoli, corn on cob & asain stirfry mix are always in the freezer.

Breakfast items are pretty basic and always on hand- eggs,bacon, cereal, oatmeal
Snack items are mostly fruit & cheeses

I do bulk make and freeze waffle sticks & muffins for quick grab in the morning or after school

17-365 & ~Tasty Tuesday~ all in one

Beef & 3 Bean Chili !



So perfect for this freezing snowy day.









Quick and easy I tell you.

Package of Chili seasoning
1 Onion-chopped
a couple Garlic Cloves-chopped
1 small can Tomato Sauce
1 regular can Tomatoes (here I used fire roasted)
1 can RoTel Tomatoes & Chiles

1 package Lean Ground Beef

I cook my own beans- black, kidney, red
I used 5 laddles worth-juice included
or of course canned works too

1 can black
1 can kidney
1 can red or pink

In my crockpot I heat up the beef, onions, garlic, seasoning.

Then just add in all the canned items plus 1 cup water.

Simmer 6 hours.

Serve with Fritos, shredded cheese, sour cream, jalapenos.........




Now to be gluten free just check your seasoning package and select a different one if needed, obviously to be dairy free leave off those select toppings, slightly lowcarb/primal due to the beans you could always eliminate those and of course the Fritos too

Dinner for the next 2 weeks

No particular order.
Meats are already bought and in the freezer, staples like Rice/Pasta/Potatoes are already on hand.
Fresh/frozen veggies were bought today.



  • Nacho/Taco/Burrito Night, chicken flavored rice and the following toppings lettuce-tomato-avocado-onion-cheese-sour cream

  • Sausage Soup w/mushrooms & spinach, bread rolls

  • Salmon, rice, garlic green beans

  • Grilled Flank Steak, baked potatoes, grilled Zucchini & eggplant

  • Grilled BBQ & Red Hot chicken pieces, pasta salad w/ cucumbers, tomatoes, bacon

  • Sesame Pork Lo mein w/ broccoli, squash, onion, mushroom

  • Brats & Peppers w/broth , rice

  • Pork Chops, rice, beans

  • Spaghetti w/ground pork red sauce

  • Chili w/beef & beans, Frito's, saltines

  • Creamy Broccoli Pork chops, garlic bread, peas

  • Burgers, fries, corn on cob

  • Chicken Alfredo Pasta

  • Corn Beef on rice w/ corn & fries

Jalapeno Beef!

Ingredients:
1 small can tomato sauce, 1 large can Jalapeno (whole/halved/sliced whichever) save liquid, remove carrots if there are any, 1 can tomato & chilies, 1 package Thin Sliced Beef (its usually pretty cheap and super thin huge pieces)

Directions:
Slice up beef into thin strips, place in large pan, add in all three cans, simmer for 20-30 mins.

Serve with beans, rice, tortillas, tomatoes, avocado.....

Thai inspired Steak Salad

This is really good, not spicy at all, Gluten & Dairy free!
Yum Yum Yum
This feed my family of 6
Ingredients:
4 Steaks of your choice 1in think
Romain Lettuce
Spring Mix Salad
1 English Cucumber, halved & sliced
6 Cherry Tomatoes, quartered
4 Sweet Mini Peppers, seeded and sliced
1/8 of an Onion of your choice, thinly sliced
4 Big Limes, juice 3, half and slice 1
1pk/cup Fresh Mint Leaves, rough chop
1cup/handful Fresh Cilantro, rough chop
1pk Lemongrass, cut into 1in pieces
1/4 Sugar
1tbs Sweet Chili Sauce
1/3 cup Fish Sauce
1tbs Sesame Oil
1/4 cup Olive/Veggie Oil

In a large bowl combine-
Cucumber, Tomatoes, Peppers, Onion, Lime, Mint, Cilantro, Lemongrass, Sugar, Chili Sauce, Fish Sauce, Sesame Oil, Olive/Veggie Oil
Let your 3yo daughter stir ;)

In a hot pan-
Cook Steaks until medium, don't over cook
Slice into thin strips, combine steak and juices into the Veggie/Sauce bowl
Mix well
Cover and refrigerate 3 hours
When it's time to serve-
Chop Romaine and mix with Spring Greens
Pull out Lime slices and Lemongrass pieces from Steak/Veggie bowl
Mix Steak/Veggie mixture well, serve over lettuce mixture, spoon sauce over as a dressing
